The foundation of our groves is the indigenous Dalmatian variety Oblica, alongside four Italian varieties: Leccino, Pendolino, Frantoio, and Coratina.
Oblica: Capricious, with unpredictable and irregular yields, yet highly resistant to drought, winds, and cold. Its large fruit yields gentle oil with mild spiciness and bitterness, pronounced sweetness, and aromas and flavors of ripe olives.
Leccino: Modest, reliable, and highly adaptable, originating from Tuscany, central Italy. Its long, drooping branches bear medium-sized fruit that produces oil with a pronounced fresh, fruity aroma of olives.
Pendolino: A distinctive Tuscan variety with characteristic drooping branches and lush foliage. It produces small, often underestimated fruit that yields exceptional oil.
Frantoio: Another prized Tuscan variety with proud, upright branches, producing high-quality oil of dark green color, pronounced fruity aroma, pleasant bitterness, and spiciness.
Coratina: An extraordinary variety from the warm, sun-drenched southern Italian region of Apulia. It ripens late, yields abundantly and consistently, and produces aromatic, intense oil rich in polyphenols.
